Assistance with completion of online quote form (Jotform based template)

I have created an online quote form using Jotform, which I plan to use to take exhibition entries for an agricultural show event. The form is complete, however I need help with a couple of final items, as per below:
Development of the spreadsheet to reduce the number of columns currently over 500 this needs to be nested so the admin team can navigate the entry form easier.
I will provide access details to a Jotform account hosting the form, so that the above work can be completed.
User must be very familiar with Jotform capabilities and be able to explain how they would complete the above tasks. (I can provide more information if required).
