Buffalo Chicken Meatballs
Ingredients:
½ cup cilantro
⅓ cup parsley
1 tbsp each of garlic and onion powder
1 tbsp paprika
2 tsp salt (optional)
2 tsp black pepper
½ tbsp cayenne pepper
1 large onion, finely chopped
1 cup of your favorite Hot Wing Sauce
3 lbs lean ground chicken
Directions:
1. Spray cooking sheet with cooking spray and preheat oven to 400 degrees.
2. Mix the parsley, onion, cilantro and seasonings together in a mixing bowl.
3. Mix in the ground chicken to all ingredients are blended.
4. Form small meatballs (approximately 30-35) and place on cooking sheet.
5. Bake for 25 minutes.
6. In a large saucepan add the cup of hot wing/buffalo sauce and heat on medium (it is best to do so when there are about 5 minutes left for the meatballs to cook).
7. Remove meatballs, toss in wing sauce and enjoy!
Easy Protein Pancakes
*yields 4 small or 2 large pancakes
Ingredients:
½ cup of old-fashioned oat
2 tbsp plain Greek yogurt
1 scoop of Whey protein powder (or 28 grams)
2 tbsp applesauce
2 tbsp unsweetened vanilla almond milk
½ tsp vanilla extract
1 tbsp chia seeds
2 egg whites
¼ tsp baking powder
