Add logged in user\'s email address to order form submission email addresses

I have a one page order form that uses userCake to manage users, and userCake is working GREAT. Currently, when an order is placed a confirmation email is sent to an admin user. I need to grab the loggedInUser email address and send order confirmation to that user and the admin currently in the list. Should be a simple fix, I just can't get the syntax right on the $email_to line of my [login to view URL] file.
