Own Email server setup on AWS instance along with rule

There is one ask to setup own email server along with all security,spamming features like(GSuite, O365, Zoho Provider...) for custom domain using free email server software on AWS instance. Additionally, need to setup inbound or outbound rules to track the email and that has to be stored in separate database/tables... E.g. Company has their own email id with their domain name now customer will send complain or feedback that has to be track through our email server. customer can email from any of the mail client like gmail or any personal email id to company's employee email id so email conversation will be done through our own email server which are running on AWS so you can think of it. Reply with below question ans Do you have experience for similar job in past if so just describe high level approach so we can understand? Have you done email tracking and store conversation in separate table?
