I would divide the data in your sheet based on two dates first and then since it has a huge data, we can use a scatter diagram to show how the prices for each date got changed every day, A trend would show the deviation in price. The major work with this problem is dividing the data for both the dates, then when the data is sorted we can get any type of analysis from it.

I have good command over excel and its formulas and should definitely be able to help you in achieving your desired result. Have gone through your attached file. Using few excel formulas, what I found that there are there are 98 different flights in your data. Flight 9W-688 occurred 1439 times which is the maximum and AI-401 occurred 4 times which is the minimum. Of course I need to understand what what exactly you are looking for
