This is exactly what I do, I run hosting/SaaS servers for multiple clients, on premise, cloud, VPS, etc... Then nginx config is very easy and I have it running on almost all of my secure domain already, I've got it in nginx version 1.4.6, all the way up through 1.8.1 As for the SPF records and DNS stuff, that should be fair quick also. Dear sir, I have over 15 years of experience in administering linux servers, and among other things nginx and mail servers. I can finish work very quick considering nginx, but if you want to set proper DKIM, DMARC and SPF there is a need to make proper records in your DNS zone (quite easily doable if your domain registrator has some sort of web interface). Anyway, SPF and DMARC doesnt require anything else but new DNS records, while DKIM needs a setup on your mail server; how it will be done depends on what configuration you are using as your mail server.
