I have worked on similar type of applications using microchip 32-bits MCU which has built in 12-bit ADC with 18 SMPS rate. The idea behind this project was to interface analog sensors [upto 10V] , use digital IOs [upto 12VDC], control external devices using relays, send sensors log to cloud using cellular module.
